Homemade Granola

Ingredients
3 1/2 cups old-fashioned rolled oats
1 1/2 cups unsalted nuts
1/2 cup unsweetened coconut flakes, pumpkin seeds or sunflower seeds
1/2 cup dried fruit (reconstituted in 2 Tbs orange juice or water, if necessary)
other add-ins: flaxseeds, chia seeds, protein powder or wheat germ (optional)
1/2 cup vegetable oil (can also use grapeseed, canola or neutral unflavored oil)
1/2 cup honey, maple syrup (warm) or agave nectar
1 tsp vanilla
1/4 tsp salt
other seasoning: cinnamon, nutmeg, brown sugar, etc.
Directions
- Preheat oven to 325° F.
- Combine the oats, nuts, coconut flakes and dried fruit in a large bowl.
- If using, add the flaxseeds, chia seeds, protein powder or wheat germ.
- In a measuring cup, combine the oil, honey, vanilla, salt and any other flavorings you would like to add.
- Stir to combine.
- Drizzle over the oat mixture while tossing to coat.
- Spread evenly in one layer on a parchment-lined baking sheet.
- Bake for 30 minutes until golden and dry to the touch.
- Let cool completely.
- Stir after 15 minutes.
- Store in an airtight container for up to one month.
